Below is a snapshot of my current portfolio and questions which require your much needed input and help. I am now officially retired but dealing with some health issues since Covid and getting shingles vaccine (Shingrex). Please don't suggest paying off mortgage or moving. Mortgage payments is only $860 mo which includes property taxes for a lovely home. Paying it off will leave me house rich, cash poor. Assessed at $360k, mortgage balance $75k.
Age: 68.5 yrs
Monthly expenses: $3,500 or less, I live very frugally

$2,107 - Social Security with Part B Medicare taken out
$238 Small pension
$668 - Reliance Standard 5 yr fixed Annuity @ 5.25% ($94,740.39). Received first payment this month w/State & Fed withholding
TBD - Will withdraw monthly amount from fund(s) below for expenses for shortfall once complete portfolio is put in place.
PORTFOLIO: 50/50 and I'm very risk adverse and actually prefer 40/60 Stocks/Bonds. Note: The percentages below does not include funds at Vanguard.
1. SCHD - Schwab US Dividend Equity ETF - $52,581.49 | fee 0.04%
2. SCHG - Schwab US Large Cap Growth - $54,902.08 | fee 0.04%
3. VO - Vanguard Mid-Cap ETF - $16,811.16 | fee 0.04%
4. SCHA - Schwab US Small-Cap ETF - $9,979.84 |fee 0.04%
5. PJLXX - JP Morgan Money Market - $17,227.29
6. Reliance Standard 5 yr fixed Annuity @ 5.25% - 34.81% - $94,740.39
7. CDs - JP Morgan Chase 5.20% - matures 1/02/25 - $30,000
8. MM money at local brick-and-mortar bank - $32,000

Other Investments.
Now that I'm retired, I need to move the Roth to a better fund(s) taking into account my other investments. Hence your help, or I could also go with Fidelty as I recently opened up an account with currently $0 balance.
9. Vanguard Roth | Target 2020 VTWMX - ER 0.08% - $55,459.73
10. Vanguard MM | VMRXX - ER 0.11% - $19,077.46
TOTAL INVESTMENTS: $382,816
Questions:
1. Can you please provide your input/suggestion which fund(s) I should I move the Roth to? I can do Vanguard or Fidelity (opened account has $0 balance). I'm assuming I should leave the MM at Vanguard given the interest rate at brick & mortar banks are much less.
From which account(s) do I draw the monthly amount from for the short fall? . This is all new to me and not quite sure the best approach; it's very overwhelming! Thank goodness I have my bogelhead family.
